What function does the fluorescence have in pseudomonal fluorescent bacteria?

These bacteria do not present much color when viewed via the microscope; however the name should carry some indication of color. Has the color a specific function? Describe the process by which the bacteria turn meat "off"? The process by which the bacteria influence milk is outlined in text books, however the "meat" process seems to be glossed over.
