Carboxypeptidase A is an exopeptidase, which means that it only cleaves the C-terminal residue from a polypeptide chain. Why is only the C-terminal residue cleaved, and no cleavage in the chain? Which terminal residues does the enzyme prefer (ie cleave fastest)?
