Think of anything that interest you for example, Fracking, BPA, DDT or you can just google "topics in environmental health" and that might give you ideas depending on the topic you choose, you can look at how it impact environment health or how it is used to benefit or destroy the environment, what you write about really depends on the topic you choose.
