Matt and Angie have been running The Sub and Chicken Shop for about two years. They cater to the employees of a local iron foundry as well as to the office staff of numerous small, white collar businesses in a five mile radius. They offer ready-made food served in 90 seconds from the placement of the order and custom-made subs created at the direction of the customer. They do not offer a delivery service, and their prices are a bit high. Their seating overflows at mealtime, their decor hasn't been updated since before they moved into the building, and the dining area tends to be a bit rundown and not too clean. Nonetheless, customers love the food and the service, and Matt and Angie have fashioned friendships with many of the regulars.

A franchise of a national chain of sandwich shops opens a store about five blocks from Matt and Angie's shop. The franchise has lower prices and a delivery service. It doesn't premake meals, and it doesn't customize sandwiches. The franchise offers a variety of standardized subs made fresh and some other prepackaged items. Its service time is about 3-6 minutes. The employees earn minimum wage, and although they are efficient at their jobs and are polite, they aren't concerned with the individual customers. The franchise is new, brightly decorated, very clean, and spacious. The franchise owners were looking for a location for about six months before they opened, and they had even approached Matt and Angie about selling out.
