In this region of Canada, you can find the world’s largest fruit farm, the world’s largest producer of frozen French fries, the world’s largest supplier of frozen wild blueberries, and North America’s largest carrot processor (not to mention Canada’s very first candy bar manufacturer). Niche markets, and the increasing demand for high-value organic, specialty (e.g., coffee, cocoa) and “fair-trade” products, have shortened the distance between producer and end-market, permitting small farmers and processors to link directly with retailers (and even consumers).
